Speedy Chapati Noodle Stir-Fry: A Fast and Flavorful Meal
Last week, amidst an incredibly hectic schedule, I was taken aback by a surprise visit from some friends. It was noon, and I hadn't anticipated any visitors, having just finished my Indian lunch. Anxious about not having anything prepared to offer except for some dry snacks and beverages at home, I swiftly scanned my kitchen and discovered a few leftover chapatis. Knowing my guests were pressed for time and wouldn't be able to linger for a typical, leisurely Indian meal, my mind raced to concoct a quick and healthy recipe.
In just 20 minutes, I whipped up a dish that not only satisfied their hunger but also left them amazed by its taste. Encouraged by their request for the recipe, I'm sharing this simple yet flavorful one-pot meal with you all. Ingredients you only need :- 2-3 chapatis (leftover or freshly made)
- 1 cup of mixed vegetables (carrots, bell peppers, cabbage, onions, etc.)
- 2 cloves of garlic, minced
- 1 small piece of ginger, minced
- 2-3 green chilies, chopped (optional, adjust to taste)
- 2 tablespoons of soy sauce
- 1 tablespoon of tomato ketchup
- 1 tablespoon of oil
- Salt to taste
- 1/2 teaspoon of black pepper powder
- Chopped coriander leaves for garnish or spring onion (optional)
Quick instructions you need to follow:- Start by cutting the chapatis into thin strips resembling noodles.
- Heat oil in a pan or wok over medium heat. Add minced garlic, ginger, and green chilies. Sauté for a minute until fragrant.
- Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
- Now, add the chapati strips to the pan along with soy sauce and tomato ketchup.
- Mix everything well so that the chapati noodles are coated evenly with the sauce.
- Season with salt and black pepper powder according to your taste. Stir-fry for another 2-3 minutes until everything is heated through.
- Once done, turn off the heat and transfer the chapati noodles to a serving plate.
- Garnish with chopped coriander leaves if desired.
- Serve hot and enjoy your delicious chapati noodles!
