Recipe: Egg Rolls/ Wrap

Egg rolls are popularly known as Frankie or a Wrap. This egg roll/ wrap recipe is easy & quick to go and contains a whole goodness of many healthy veggies. These hot egg rolls can be your quick dinner or ideal meal pack for picnics and lunch boxes. Its one of the popular street food in India. You must try these lip smacking egg roll recipe. To make it more healthier, you can cook it with olive oil and whole wheat chapati . I am using a ready made tortilla wrap here to make this roll.

Ingredients

  • 2 cup Whole Wheat Flour for wrap dough
  • 1 teaspoon Olive Oil
  • 4 Whole Eggs
  • 2 Green Chilies , finely chopped (optional)
  • 1 Onion , finely chopped
  • 1 Tomato, chopped
  • 3 button mushroom, chopped
  • 1 Onion , thinly sliced
  • 1 Green Capsicum , thinly sliced
  • 1 Cucumber , thinly sliced
  • 4 tablespoon Tomato sweet chills sauce
  • Coriander leaves , finely chopped
  • 2 tablespoon Lemon juice
  • Salt & crushed black pepper to taste

Recipe: Egg Rolls/ Wrap

Method

  • To begin with egg roll, first knead the smooth dough with salt and enough water. Add the little olive oil once the dough is ready and knead for a few more minutes and make 4 portions out of this dough.
  • In a separate bowl, whisk the eggs and add chopped onions, tomatoes, green chilies, mushroom, capsicum, salt and crushed pepper.
  • Dust the portions of dough in flour and roll into a large circle.
  • In a separate plate, combine the sliced onions and cucumber and keep it aside.
  • Heat a flat pan, cook the wrap in olive oil until cooked on both sides. Once the wrap is cooked, remove it from pan and pour the egg mixture and cook the egg completely from one side. You will see getting it dry from the facing side as well.

  • Now place the cooked wrap on the facing side. It will stick to the egg. Turn it around and cook it for a more minute. Make more egg wraps in the similar way.
  • Now remove this egg wrap on the surface and  place a portion of the onion and cucumber mixture in the center.

  • Drizzle some tomato sweet chili sauce and lemon juice and make a roll. Wrap up the roll into an aluminum foil to hold it together. Repeat the same procedure for the remaining egg wraps with onion cucumber mixture.
  • Serve these hot egg rolls with ketchup for a quick dinner or evening snacks.
