Recipe: Mexican Vegetarian Rice

Mexican food is one of the popular food around the world. I love Mexican flavors and the fact that they have so many vegetarian options. Especially, Mexican Vegetarian rice is a one of the quick pot dish which you can serve as a side or as a part of main dish. The rice is lightly spiced and has corn, tomato, garlic, onion and many other veggies with some boiled beans. This aromatic rice is not only a great treat to your taste buds but also leave a soulful experience in your heart.

Ingredients

  • 1 cup basmati rice
  • 3 teaspoons olive oil
  • 1 small red onion chopped
  • 2 garlic cloves chopped
  • 4 tablespoons yellow corn
  • 1/2 cup colored paprika mix 
  • 1/2 cup boiled beans
  • 1.2 cup carrot, chopped
  • Handful peas
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon red chili powder(optional)
  • 3 tablespoon tomato ketchup
  • 1.5 cup water
  •  1/2 lime Juice
  • 1 tablespoon chopped spring onion
  • 1/2 tablespoon Chili Flakes (optional)
  • Salt and black pepper to taste

Method

  • Rinse and soak rice in enough water for 15-20 minutes. Drain and set aside.
  • Heat olive oil in a pan on medium heat. Once hot, add chopped red onion and cook for a minute. Then add chopped garlic and cook for another minute.
  • Now add yellow corn, peas, paprika mix, carrot and peas. Add cumin powder, salt, pepper and fry around 2 minutes on increase heat.
  • Add the soaked rice to the pan and saute it with all veggies for 2-3 minutes.
  • Then add tomato ketchup, water and mix. Lower the heat to medium. Cover the pan and cook for 10 minutes. After 10 minutes, lower heat to low and cover and cook for another 5-10 minutes or till rice is soft and done.

  • Switch off the flame and let the rice remain covered. Remove cover after 10-15 minutes. Fluff with fork, add chilly flakes, spring onion and lime juice. Serve hot with Nachos and Salsa sauce.
