Speedy Brunch Recipe : Spinach & Corn Scrambled Eggs

Spinach & Corn scrambled eggs with Toast: A perfect breakfast or brunch with Toast


We all know that the breakfast is an important meal of the day. It jump starts your metabolism and helps you burn to more calories throughout the day. This "Spinach and Corn scrambled eggs with Toast" one of  an International breakfast & my personal speedy recipe ,which can definitely considered to be a brunch also. It's perfect for the rushed mornings and also when you want to steal a time for yourself. The actual fun of this recipe is, it hold all the goodness of health & all ready in 10-15 minutes or under.

Spinach and Corn scrambled eggs with Toast
Spinach & Corn Scrambled Eggs

Ingredients:

1 Small red onion, finely chopped
1 Green chill, finely chopped ( optional)
1 Garlic cloves, crushed
¼ tsp ground cumin (optional)
1 Tomato, finely chopped
4-5 Eggs
2 Big spoon of canned corn
5-10 Spinach Leaves, roughly chopped
1 tsp crushed black pepper
Salt to taste

Method

Spinach and Corn scrambled eggs with Toast
In process: Spinach & Corn scrambled eggs

 1) Heat a frying pan over a low-medium heat and add the butter or oil. Gently fry the onion, ground cumin, chili and garlic until the onion is soft – about 5 mins. Stirring around the pan until aromatic.

 2) Add the tomatoes, spinach & canned corn & cook for 1 min, then pour eggs and lower the heat. Stir slowly to scramble the eggs as they cook, and remove from the heat while they are still a little runny. Add crushed pepper & salt to taste. Continue stirring off the heat for 1 min more until the eggs are just set.

 3) Garnish with coriander and serve with Multi grain bread or chapati for a breakfast or brunch.
