Recipe: Marinated Barbeque Vegetable 

The BBQ vegetables is well known and an international recipe, but every culture has a different way of making it. Basically, this recipe is all about of grilled vegetables, but I am sharing a fusion version of  "Marinated Barbeque Vegetable", which is marinated (before cooking) in  homemade antipasto. The hot, Soft and juicy veggies chunks, absorb flavor from marination and make a great experience for your taste buds .

Marinated BBQ Vegetable

Ingredients:


  • VEGETABLES 
1 Red bell peppers
1 Yellow bell peppers
2 Medium onions
200 grams button mushrooms
200 grams Cottage Cheese
(You may also add zucchini, eggplant & broccoli)
  • 250 gram Yogurt
  • 2 tsp virgin olive oil
  • 1 tsp each salt and pepper
  • 2 tsp salted butter
  • 1 tsp coriander powder
  • 1 teaspoon  lemon juice
  • 1  tablespoon ginger & garlic paste
  • 2 tsp Gram floor
  • 1/2 - 1 tsp chilli flakes , if you like spicy
  • Orange food color (optional)

Method

  • Cut all the vegetables in large pieces for easy handling on the BBQ, so they don't fall through the grills.
  •  Cut the bell peppers, cottage cheese & mushrooms into the diagonally large pieces and onion into wedges through the root end.

  •  Mix  all the other Ingredients together and make a smooth paste.
  •  Put  all the veggie chunks in a bowl and pour the paste over it. Mix gently  all the veggie into this paste.
  • Cover and keep it for the marination in the refrigerator for one hour.

  • Now, put the marinated veggies bamboo skewers.
  • Place the veggie skewers on the hot grill tawa or oven on grill setting for 10-15 mins(may depend on the oven heat) and brush it with salted butter.

  • Grill the veggies until they gets light golden and the onions are soft.
  • Remove onto a plate and squeeze some lemon juice over the veggies skewers, garnish with yogurt & mint dip and serve hot.
