Recipe: Mushroom Fried Rice

Mushroom fried rice is one of the quick stir-fried rice dish, especially when you have a rush hour to cook a meal. It’s incredibly tasty and one of my favorite kind of a comfort rice dish. This mushroom fried rice is made with long grain basmati rice, mushrooms and topped with Spring onion. Though, it is originally a Chinese dish, but I am sharing here my own fusion recipe. So, mind it all mushroom lover, Once you experience  the soulful taste of this dish, it will be one of  your favorite too.

 Mushroom Fried Rice

Ingredients

2 Cup cooked basmati rice or long grained rice
3 Small to medium garlic cloves, finely chopped
1 Medium onion
200 Grams white button mushrooms, chopped into medium pieces
2 clove garlic, finally chopped
1/2 inch Ginger piece
tbs soy sauce
1/2 tbs vinegar
3 tbs salted butter
1/2 cup green peas
Handful spring onions, chopped finely
Dry chili flakes (optional)
Cooking oil
Black pepper whole- 10 nos
Salt to taste

Method

  • Heat oil in a cooking pan, put onions and fry these for 2 mins on a slightly high flame.
  • Now add the chopped garlic & ginger and stir fry for 5-6 mins on a medium flame till lightly brown.
  • Add mushroom pieces and stir fry it for 3-4 mins.
  • When the mushrooms become cooked, then add a cup of green peas and stir fry  a more minute.
  • Now add soy sauce, vinegar, black pepper whole and salt.
  • Keep stirring it on a medium flame till 2-3 mins.
  • Add boiled rice now and stir it gently for 2-3 minutes.(Please note that put the bowl of cooked rice in the fridge, if you are using fresh rice in this dish).The colder rice is always better for this dish.
  • Stir fry until the rice is piping hot and the peas are cooked. Add salted butter & red chili flakes.
  • Serve the mushroom fried rice immediately garnished with spring onion.
